Why do baristas dial in?

“Dialing in coffee” is basically calibrating the brewing recipe so that a particular coffee tastes its best. The term is especially associated with espresso.

Coffee beans aren't identical. Even if you use the same roaster, a new bag can behave differently because of:

  • Roast level
  • Bean density
  • Origin and variety
  • Processing method
  • Age/freshness
  • Humidity and temperature
  • Grinder characteristics

So a grinder setting that worked yesterday may not produce the same extraction today.
